Cayenne
Pepper (ground red pepper) adds that spark of flavor
that does so much for so many foods. Be adventurous, but use
with restrain, in cooking all of your favorite dishes. An
all-time favorite when boiling seafood.
New Orleans Style Spicy Fried
Chicken:
- Cut chicken into serving-size pieces and wash.
- Moisten chicken with water, then sprinkle with
cayenne pepper and rub in, cover and refrigerate for one
hour.
- Preheat shortening in frying pan or fryer to 350
degrees.
- Empty favorite breading mix into a shallow bowl. Coat
each chicken piece pressing to cover completely. Shake
off excess.
Place chicken in hot shortening, skin side down. Fry
until golden brown, turning as necessary. Heavier pieces may
require a longer cooking time.
